The Breakfast Club

What is your favorite meal of the day?

I personally love breakfast. I can eat breakfast three times a day if I could. My ultimate favorite kind of breakfast would be anything that involves garlic rice, some eggs, and a plateful of bacon fried to crisp perfection drizzled with pancake syrup.

But just recently, I've been addicted to PB and Nutella toast. Sometimes I put half and half just like in the picture and some days I also like swirling them together before popping it in the oven. I am wiping my drool as I type this. Haha!

I saw a recipe for Nutella bread pudding (you cut up a Nutella sandwich, place it in a pan with eggs and milk and bake it the oven for a bit) and I've been meaning to try it. Maybe one of these days I will and I'll let you know how it goes. d:

WaW!

As in What a Weekend. (:

Saturday morning was spent with one of my good friends K, baking Macadamia White Cookies and Chocolate Turtle Pie (I haven't made this in soooo long!). We had so much fun baking and eating. (: I'm going to miss her so so so much! But what's one month with the Internet?

Then, my dad picked me up so we could go shopping for food. Hee. I love grocery shopping, even if sometimes I get lazy to do it. It helps that it's so cool inside the supermarket. Hehe! We were under our limit this month so hooray! We cut back on the Ritter Sport this time around, though. Last month, we got P650 worth of just chocolate. Yikes! The horrible "tagalized" version of "Umbrella" was playing in the supermarket and just as I said, "Nakakairita ang kanta. Ano ba!" someone behind me was singing along to it. Haha!

I also finally got my hair trimmed! Haha! My stylist wasn't there when I went last time so I was happy he was back this Saturday. (: I'm back to looking like a twelve-year-old and I've ditched my konichiwa bangs because everyone is getting them! O: I'll get them again when my hair is back to its longer length. That will be my new hair obsession. d:

Today, I tried out new cupcakes recipes. Both I will make again because they were good! One was for a low-fat chocolate cupcake and the other was for the perfect vanilla cupcake (rose just right, wasn't too sweet, and was fluffy!). Yum-o! I turned my leftover buttercream frosting into peanut buttercream frosting! I love peanut butter! Yahoo! If I had a jar of Nutella, I would've probably used that instead. Hee. There's an idea for my next baking experiment... (:

I have a cake date this week! Yay!

I wish all my weekends were like this. So steady and laid back. How was yours?

Baking Mojo

Three strikes and I'm out. Wah.

Two in a row now. First, it was my second try at Vanilla Vanilla Cupcakes (I thought self-rising flour was cake flour—apparently, not). So I did the same recipe, this time using the correct flours. I ended up with cupcakes that felt like puto. They looked like cupcakes alright, but when I took a bite out of one of them, it felt wrong. It wasn't until I finished the cupcake that I realized its texture resembled that of a puto's. Dammit.

This morning, I wanted chewy peanut butter cookies. I remember making these from my Mrs. Fields Cookie Book so I whipped out the ingredients and started making the batter. I should've probably worried about my batter looking a bit runny and should've probably lowered my oven's temp at this point.

I only put six cookies on each baking sheet because I knew they'd spread out (I usually put twelve on a sheet).

I didn't think they'd spread out (to the point of some batches becoming one gigantic cookie) that much.

So now, I ended up with crispy-chewy (there's a crunch on the edge but the cookie itself is chewy—I'm guessing because of the amount of sugar in it) too-thin cookies. Sigh.

I'm scared to bake again because I might mess it up! Ugh. I've been wanting to try this recipe for old-fashioned chocolate cupcakes with marshmallow topping all week, but after this, I don't know. Huhuhu! Have I lost my baking magic?

Surprise!

I haven't made cupcakes in a long time. And one of my favorite cupcakes ever are these chocolate cupcakes with a peanut butter center. I've made them only twice in my life and both turned out yummy despite being slightly under baked.

Enter this recipe from Delicious Days for Nutella Banana Muffins. I was itching to try out the recipe, so I made it for breakfast today. And because I remembered the Choco Peanut Butter cupcakes I made before, I decided to spoon a dollop of crunchy peanut butter in the middle of my batter.

And oh my goodness. Look at what came out? My dad rolled his eyes before closing them when he took a bite of this. HAHA! Best non-verbal review you can ever get.

Next time, maybe I'll try spooning some chocolate ganache on top.
